Delicious Whole Wheat Freshly Ground Bread

Lately, I have started up my old habit of grinding fresh whole wheat and making flour with it so that my family and I can have fresh healthy bread. It is so tasty that I love to eat it with butter just for a snack. It is amazing because it is good food and a natural medicine for our bodies. Large Loaf:

2 Cups of white flour
1 1/2 cups of whole ground wheat flour
2 Tbsps honey
1 1/8 cups of water
1 1/2 tsps. salt
1 1/2 Tbsps dry milk
2 tsps. yeast
(I add a tsp or 2 or flax seed because its good for inflammation and other things)

This yields 1 loaf

Here is what we do:

1. We first clean our wheat because we get it from the feed store made for cattle.

a) get some wheat out and pick through it to take out any rocks dirt or extras like corn.
b) place the picked wheat into a strainer and rum water through it until it comes out clean and that usually just takes a minute or so.

Alternatively you can buy clean organic wheat online or through another provider of whole foods. I believe red wheat is supposed to be the most nutritious. We buy from the feed store because it is a whole lot less and really easy to clean.

2. Next, we spread paper out on a large cooling rack and allow the wheat to dry outside up high so that our dog doesn't get to it. It doesn't take but about an hour on a warm day. On a hot summer day even quicker.

3. Then, we take the wheat in and grind it in our grain flaker on the finest setting and then regrind it until we are happy with the consistency. There are other grinders out there made for wheat and one day I would like to get an electric one that is really fast. But the kids love using the one we are using so we save out money for now.  (I don't use it because I have tendonitis in my arm pretty bad.)

 4. I load my bread machines with the ingredients from my recipe book that came with the machine and allow the machine to do the kneading for me. Because I can't do that anymore either and its a time saver. (its kneading right now while I write this blog :)

5. After about and hour and a half of kneading I take the dough out and shape it into a loaf and then another and cover with plastic bags util they are risen to the top of the pan. To get them to rise I place them right around the vent on my stove top so that the warm air can creep into the loose fitting bags and cause the bread to rise.

6. After they are finished rising then they are ready to go in tot he oven for about 23 to 25 minutes.

7. Allow those to cool for around 5 minutes or so and cut your bread. I like to use an electric knife to do that.

8. Then we use our bread bags and but them in there when they have totally cooled and tie.

Note: This flour can be used to make all kinds of things from bread to cookies to pastries.
