3 cans of Spam diced
1/3 cup of diced white onion
4 spoons of minced garlic
1 1/2 teaspoons of fajita seasoning
a pinch of fresh cilantro
5 hefty shakes of Louisiana hot sauce
1/4 cup of picante sauce
a spoon of plain yogurt (per tortilla)
1. Coat large skillet with vegetable oil.
2. Add diced onions, spam, garlic, seasoning,cilantro and picante sauce to pan and cook on high stirring constantly till onions are translucent.
3. Add your hot sauce and and stir in pan to coat. Cook another minute to blend the flavors.
4. Build your fajitas with the mixture and add a dollop of plain yogurt on top. Delish!
