Eggs Con Nopales

Someone gifted us some great nopales packages and we have really enjoyed them. Add some eggs and you have a great breakfast or brunch. Did you know that Nopal or Prickly Pear Cactus is good for normalizing blood sugar. When you cook it it is kind of like cooking a okra a little slimy but doesn't taste like okra. Try it you may like it!

Eggs Con Nopales

Ingredients:

enough eggs for your family
a tablespoon of milk
cooking oil
4 nopal leaves sliced
2 caps full of lemon juice
picante sauce
salt
pepper
green onion chopped
about four shakes of Parmesan cheese
tortillas
plain yogurt

Directions:

1. Coat your pan with a spray of cooking oil and fry your nopales with the lemon juice until all of the pieces have changed to a duller green color.

2. Wisc up your eggs and seasonings and add them to the frying pan. Cook until done.

3. Warm up your tortillas for about a minute in the microwave.

4. Serve while warm.
