Treasury of Ingredient Substitutions

I have been thinking a lot about ingredient substitutions in my baking and cooking, especially since I don't run to the store every time I want an ingredient that I don't have. I usually find something else that will substitute or I will decide on a different menu plan. In fact I keep extra recipes that are easy to fix close by so that I can change on a moments notice.

Then there is another thing to consider, what do I have a lot of in my pantry that I need to balance. At my house it is spinach, rice and beans because people like to hand those things down to us. I don't mind them doing that at all, I consider that as a blessing from God. On the other hand, I need to try to make those items as tasty as I possibly can. that is where learning the art of substitutions is key.

Treasury of Ingredient Substitutions
(frugal and healthy)

Milk- water, milk and water, or any dairy product like cream or yogurt mixed with water to make the right consistency, oat milk or rice milk
Eggs- 1 tablespoon ground flax seed and 3 tablespoons water or Applesauce, 1/4 cup per egg or 1/2 smashed banana, mayonnaise plus a ton more.
Buttermilk- milk with 1 tsp of vinegar or lemon juice
Vinegar- lemon juice

Flour- half whole wheat half white, rice four, oatmeal flour, bean flour, (depending on recipe)
Cake Flour- 7 parts all-purpose flour to one part corn starch
Baking Powder- 1 part baking soda 1 part cream of tarter
Baking soda- use 3 times as much baking powder
Corn Starch- use 2 times as much all purpose flour

Oil/Butter-unsweetened apple sauce, smashed bananas with a little oil, smashed cooked carrots with a little oil, kefir grains plus a little oil, avocados
Sugar- honey in equal parts (cook a little shorter or turn down oven 25 degrees), replace half the sugar with vanilla,
Light Brown Sugar- honey
Dark brown Sugar- honey or sugar with a little molasses or straight molasses

Cocoa Powder- two times as much melted chocolate
Chocolate Chips- chopped chocolate
Chocolate- 3 parts cocoa powder and 1 part oil

Peanut-butter- try beanUT-butter

Fresh Lemon Juice- equal parts unless concentrated then half with water
Fresh Lime Juice- lemon juice from a bottle
Fresh Orange Juice- lemon juice from a bottle
Pure Vanilla- imitation vanilla
