Homemade Lacto-fermented Honey Dijon Mustard!






Happy 4th of July to ya'll out there in blog land. We just had some tasty hot dogs and sausage dogs served with homemade mustard and homemade lacto-fermented ketchup. We served them on a table set with news paper pages for each place mat/plate. I didn't want to spend all of my 4th cleaning more dishes. I just loved how it brought inside a feeling of picnic since the outside is super hot where we live. The guys and Zoi were outside this morning working on beautifying the yard so they were ready to stay indoors.

Homemade Honey Dijon Mustard
(warning this stuff is hot!)

1/2 cup of powdered mustard
3 table spoons of dill or more if it is fresh
3 table spoons of whey
3 table spoons of honey
1 tsp. of sea salt

Mix up all of the ingredients and set on the counter top to ferment for a day then transfer it to your refrigerator. Spoon on your condiment or transfer to a squeeze bottle.

This recipe was a little too spicy so I added a little regular yellow mustard from the store. Please comment and let me know if you could suggest anything else I could add to it to lessen the heat.
