Kefir Cake

I really like to have cake for breakfast every once in a while so I adapted a recipe of Amish Friendship Bread to fit my needs the other day.


Ingredients and Directions:

Mix together
(with electric mixer) Dry Ingredients
3 cups flour
1-1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt 

Mix (with electric mixer so that you can break up the kefir grains) in Wet Ingredients
1 tsp. of vanilla
1 cup honey
1/2 cup of oil
1 cup of Kefir grains drained
3 eggs
1/2 cup of milk or water
You can also add 2 tsp. of cinnamon if you like.


Variations:
add your favorite chopped nuts pecans or walnuts would be nice.
add some berries or fruit on top for color and yumminess!


Bake on 350 for 20 to 23 minutes or until golden brown and tests ready.
Eat without icing or add what you like we eat it without icing and sometimes add butter spread onto it much like a muffin. This recipe could also be used for a vanilla Birthday Cake with some added icing.
