Mashed Potato Doughnuts

I had some mashed potatoes left over from last night so I decided to use them up this morning. I have always heard that potatoes make great doughnuts. I don't use a lot of sweetener so if you want it sweeter you might want to put some kind of glaze on. Here's the recipe.

1 1/2 cups of honey
3 cups of mashed potatoes
4 cups of white flour
4 cups of white wheat flour
1 tablespoon sourdough
5 tsp baking powder
6 eggs
1/2 cup of oil
1 and 1/2 cups water

Stir together potatoes and honey into a paste add eggs and beat then stir. Add oil and water stir. Then add all of the dry ingredients and stir with a wooden spoon. Press out to a 1/2 inch thickness and cut with a doughnut cutter or two different round cutters that will make a doughnut shape. I used a tin can with a whole in the top and  the lid off of my pepper shaker for the hole. Deep fry on each side until golden brown. Serve!

One our family's sweetest memories of living in Africa is when a fellow missionary wife would decide to make mashed potato doughnuts and then deliver them hot and fresh to our homes - one a piece - and man! were they delicious!! You might enjoy this post of mine - a little goes a long way and fun too!
