Feeding Friday Comment Link Party #5

Welcome to the party. We are so glad to have you here. Today I wanted to share an old recipe that I had with you from a wonderful missionary to Guatemala and the the joyful, mother of 8.  Ms. Tammy can be found at: This Pilgrimage. Also she just had her 8th child and she is a beauty. If you have never had this treat it is reminiscent of a chocolate pie. Very yummy!

Pinto Bean Pie

2c. cooked unseasoned beans with juice
1/2 c. flaked coconut
4 eggs
2c. sugar ( I use honey)
1 tblsp. vanilla
1c. butter
2-9inch pie crusts

Puree beans, mash until they are really smooth, mix with coconut eggs, sugar(or honey), vanilla and melted butter. Beat well and pour into prepared crusts. Bake at 350 degrees F for an hour or until set in the center.
