Beans with Cheese

Last night we had beans and the kids really liked them so I thought I would share this simple but delicious recipe with you. Its not often that a recipe that contains boiled beans gets this much attention from my children.
After a breakfast or lunch

1. soak a package of beans over night
2. rinse drain the beans (so that all of the gas causing agents are out)
3. cover your beans in water with about an inch and a half extra and add 2 table spoons of salt
4. place on large burner on high until boiling then turn to 3
5. leave on 3 until about 30 to 15 minutes before your next meal then
6. add two or three tsp. of minced garlic and the same of cilantro
7. after that cooks for a little while then serve with shredded cheese and tortillas on the side.
I like to lay a couple of corn tortillas on a plate and then top with a ladle of beans and a pinch of cheese and a tsp. of sour cream. This reminded me so much of being in Mexico and eating a great meal there. Enjoy!

You can also serve this with rice and salad and make it into a taco night!
