Pumpkin pie without sugar!

Pie dough (I used homemade wheat)
1 small freshly prepared pumpkin
1 1/2 c. evaporated milk, undiluted (made my own for the first time google it)
1/4 c. molasses
1/2 c. truvia stevia
1/2 tsp. salt
1 table spoon pumpkin pie seasoning
3 eggs, beaten slightly
Use small to medium size pumpkins. Clean out seeds and either save to plant next year or roast them later when you are done (great for a parasite cleanse) . Cut pumpkin in half and bake faced down in a casserole dish filled half way with water to keep it moist. Bake at 400 degrees for for about an hour or until pumpkin is very tender. Remove and put immediately and sprape with a spoon off of the skin into a large bowl and use a hand held beverage blender to make into a smooth filling or use your blender both will do the job. My kids enjoyed each getting a turn at using the hand held mixer.

For Pie: Preheat oven to 425 degrees. Mix well fresh pumpkin with remaining ingredients. Pour into pie shell. Bake 15 minutes at 425 degrees, then reduce heat to 350 degrees. Bake another 45 minutes or until an inserted knife comes out clean.

Recycling tip and money saving tip of the day!

install plastic hooks upside down on the outside of your trash can and use those plastic grocery bags from the store in your kitchen trash. I put in two on each side plus I hotglued a couple of clips from skirt hangers to each end of the inside to hold in the bag to the side and then I used a small plastic skirt hanger and clipped each bag to the other in the middle. Works great and you can have little helpers get the trash out easier too. Its not so heavy for them in the small bags and they feel big. I guess you could just use clothes line clips or other clips you may have hanging around the house as well. God Bless!

Muffin pizzas

Today we made muffin pizzas and the kids really raved over them so here goes!

Heat your oven to 350

Make up some pizza dough Two recipes of it will be good. Use the recipe of your choice, I have a simple one that I use whole wheat dough with and its made with baking powder and not yeast there fore it is faster on days like today when you are baking for Thanksgiving.

Take your dough flattened onto a extra large cutting board or kitchen surface and grab a small mouthed glass jar or other small biscuit cutter and cut out lots of small circles. I let Zoi girl cut some of these she likes to bake with Mom.

Place each circle in the bottom of sprayed muffin tins and top with half a spoon of sauce

Then top with a generous pinch of cheese and other ingredient or only cheese (that's what we did) I let my little Zena do a little of this she likes to be included.

Then I added another circle on the top.

Place the dough in your tins I made 24. Put them into the oven on the center rack. Cook for about 10 to 12 minutes until brown on top. Enjoy!

Pizza pockets!

We are going to have pizza pockets the fast way. Usually I would make my own crust but I am going to do it the, I have to do all the piled up laundry and clean the dirty floors way. But you can make your own homemade crust and do it this way too, its much healthier I'm sure.

Pie crust or pizza dough
tomato sauce, picante, pizza sauce, marinara, or diced tomato
shredded cheese of your choice
meat of your choice-or all veggies-we like turkey pepperoni (make sure to pre-cook any raw meat or dence veggies)
and a little yogurt of course for dipping
one egg beaten



Cut your dough into triangles. Place on a plate and put into the refrigerator until you need them. Mix all your ingredients together in a bowl not including the dough egg and the yogurt.Now you can ask your sweet son or daughter to bring you the plate of dough from the refrigerator.Then dip a couple of fingers in your egg and apply to the edges of the dough triangles to work like glue on your pockets. Add the ingredients in your mixing bowl and top with another triangle. Last bring up another trusty assistant to fetch a fork and teach them the art to lightly pressing the sides of the dough to seal it shut. Ask you sweety to bring you a cookie sheet and place your triangles on the sprayed cookie sheet and cook until golden brown about 10 to 12 minutes. Be-careful its hot wait a little while before eating.

Yogurt in Desquise!





You have probably heard of many of the health benefits of yogurt. It is an alternative to antibiotic drugs. It helps repopulate the gut with healthy flora and the healthy flora eliminate some of the unhealthy flora that come from environment and stress. People with digestion problems and elimination problems have seen its benefits. Autistic people who have a constant battle with their flora and yeast overgrowth. People with high stress occupations. I believe everyone can benefit from this powerhouse! So I have included here some great ways to incorporate yogurt into your everyday life in ways that most will not even mind if they don't care for it as a snack.




Every time you have a recipe calling for sour cream use yogurt instead. Here are some ideas:

* Sour cream - on potatoes and on burritos, this is one of the best ways to eat it because it doesn't get to hot and kill the good bacteria.

                           

*Ranch dip or ranch dressing - this also eliminates the added sugar when buying them redi- made, just pick up a tub of plain yogurt and a package of dressing or dip and combine. Its super fast!



*Also there are your favorite casseroles such as stroganoff




*Last of all, there is the breads and desserts: cheese cake and Bananas and Cream in bread.



I've even used yogurt and honey to drizzle over cakes with a little food coloring.

Oatmeal Peach Streusel

This is great for breakfast! I trippled mine and added a large can of peaches!

6 tbls. butter
3/4 c. sweetener (I used honey and stevia)
3/4 c. flour
3/4 c. old fashion oats
1/2 tsp cinnamon
1 can fruit pie filling or fruit of any kind.

Heat oven to 350 Spray your pan with non stick cooking spray and set to the side.

Combine all ingredients except the fruit.

Combine until it becomes a fine crumb mixture.

Layer the fruit on top of the crumb mixture.

Bake on middle of the oven rack for 30 to 40 minutes until bubbly and golden brown color.

A Peanut Butter Bar In Disquise!

I just love peanut butter wafer bars. The crunch and the peanut butter oosing through with a hint of sweetness. Here is my easy fast way of creating this essence.

Ingredients:

Peanut butter of your choice
Sea salt
honey

Toast two pieces of bread in a toaster set on number 3 or toast till a little brown in the oven. Then spread peanut butter add some sea salt and then drizzle some honey. Yummmm! Also you can cut these up into strips to create a more party like snack.
